CHOCOLATE COCONUT BITES

• ½ cup raw pecans • ½ cup pitted dates (approximately 5-6 large dates) • 2 tablespoons hemp seeds (optional) Ingredients
• 1 tablespoon cocoa powder • 1 tablespoon almond milk (or milk of choice) • 1 tablespoon collagen peptides (add more if desired, with a bit of extra milk)
• 1 tablespoon chia seeds (optional) • ½ cup shredded unsweetened coconut (plus extra for rolling, if desired) • 1 tablespoon liquid coconut oil

Instructions
1. In a food processor, pulse the raw pecans until they reach a flour-like consistency. 2. Add the pitted dates to the mixture and pulse again until combined. 3. Add the remaining ingredients (hemp seeds, chia seeds, shredded coconut, coconut oil, cocoa powder, almond milk, and
collagen peptides) to the food processor. Blend until the mixture is well combined and forms a sticky dough. 4. Roll the mixture into 1-inch balls. If desired, roll the bites in additional shredded coconut for extra texture and flavor. 5. Store the energy bites in an airtight container in the refrigerator for up to one week.

Ingredients
1 cup salted mixed nuts, chopped into pieces 2 cups broken pretzel pieces 3 Tbsp vegetable oil
2 lbs white chocolate wafers 2 cups honey nut or regular Cheerios 6 cups Crispix cereal

Instructions
1. In a double boiler, combine the white chocolate wafers and vegetable oil. Melt the chocolate completely, stirring occasionally. 2. In a large mixing bowl, combine the Cheerios, Crispix cereal, mixed nuts, and pretzel pieces.
3. Pour the melted chocolate over the dry ingredients. Mix thoroughly until all ingredients are evenly coated. 4. Line a jelly roll pan with wax paper. Spread the chocolate-coated mixture evenly across the pan.
5. If desired, add sprinkles to the mixture while it is still wet. 6. Allow the mixture to cool and harden completely. 7. Once hardened, use a knife to break the mixture into bite-sized pieces.
