WHITE BEANS AND HOTCAKES “My granddaddy used to love making hot water cornbread. I called them hot cakes because they look like pancakes. When he taught me how to make them, I was so excited. He passed recently, so this recipe is really special to me.” -Danita

For the beans: • 1 (16 oz) bag of great northern beans • 1 package of smoked turkey tails • 1 sweet onion, chopped • ½ clove of garlic, minced • 1 package of Lipton’s Ingredients

For the cornmeal cakes: • 1 cup of self-rising cornmeal • 1 cup of boiling water • Cooking oil (vegetable or peanut)

Golden Onion Soup Mix • 2 tablespoons of Knorr chicken bouillon • Water (enough to cover beans) Optional Seasonings: • Kinder’s The Blend, Buttery Garlic with Cracked Pepper (or season to taste)

DINNER WITH YOUR LOVE 5. Debone the turkey tails: Once the beans are cooked, remove the turkey tails from the crockpot. Debone the meat and return it to the crockpot. Stir to combine. For the beans: 1. Prepare the beans: Empty the bag of great northern beans into a bowl. Pick through to remove any unsavory beans and rinse thoroughly with cold water. 2. Cook the turkey tails: Place the smoked turkey tails in a pot and boil on high for 10 minutes. Drain and rinse. 3. Assemble in crockpot: In a crockpot, combine the chopped onion, minced garlic, turkey tails, beans, Lipton’s Golden Onion Soup Mix, and chicken bouillon. Add enough water to cover the beans. Season to taste with your preferred spices. 4. Cook: Set the crockpot to high and cook until the beans are soft but not mushy (approximately 2 hours). “Because nurses don’t always have time to cook.” -Mike

For the cornmeal cakes: 1. Mix the batter: In a bowl, combine the self-rising cornmeal and boiling water. Mix until a thick batter forms. 2. Fry the cakes: Heat cooking oil in a skillet over medium-high heat until hot but not smoking. Using an ice cream scoop or spoon, drop portions of the cornmeal batter into the pan. 3. Cook: Fry until golden brown on one side, then flip and cook the other side until golden. Remove and set aside. 4. Serve: Spoon the beans into a bowl and top with a hot cornmeal cake. Enjoy!
