Ingredients
• Carrots, peeled and cut into chunks • Potatoes, peeled and cut into chunks • Seasonings of your choice
• Chicken thighs and drumsticks (or your preferred chicken cuts) • Olive oil • ⅓ cup water (adjust based on the amount of chicken and bowl depth)

Instructions
1. Prepare the chicken: Clean the chicken. In a large bowl, drizzle the chicken with olive oil and season generously with your favorite seasonings. Add about ⅓ cup of water to the bowl (adjust based on the amount of chicken and the depth of the bowl) and mix well to coat the chicken evenly. 2. Prepare the vegetables: Place the carrots and potatoes in an oven-safe dish. Drizzle with olive oil and sprinkle with your preferred seasonings. Toss to coat evenly. 3. Roast vegetables: Roast the vegetables in the oven at 400°F (200°C) for 30–40 minutes, or until tender. Halfway through roasting, take some of the juices from the chicken and pour them over the vegetables. Return the dish to the oven to finish roasting.
4. Roast the chicken: Place the seasoned chicken, skin side down, in an oven-safe pan. Pour the remaining seasoned mixture (seasonings, water, and oil) over the chicken, ensuring the chicken is slightly more than halfway covered. Roast the chicken in the oven at 400°F (200°C) for 35–40 minutes, depending on the amount of chicken. 5. Finish the chicken: At the 40-minute mark, remove the chicken from the oven. Transfer the chicken to a small roasting rack and brush it with the juices from the pan. Sprinkle a little pepper over the chicken. Return the chicken to the oven and roast for an additional 20 minutes, or until the chicken is fully cooked and the skin is golden and crispy. 6.
