ZOSIA’S POLISH APPLE PIE (PLACEKZ JABLKA)

Apple filling: • 2 lbs Cortland apples (or other varieties), peeled, cored, and thinly sliced (6-7 apples) • 1 cup sugar • 2 tsp cinnamon Dough: • 3 cups flour • 1 cup sugar • 2 sticks salted butter, softened • 2 egg yolks • 3 tablespoons sour cream • 2 tsp vanilla extract

1. Preheat the oven to 375°F. 2. Prepare the apple filling. Peel, core, and slice the apples into thin slices. In a large bowl, combine the sliced apples with sugar and cinnamon. Set aside. 3. Make the dough. In a mixing bowl, beat together the flour, sugar, and softened butter on medium speed until fluffy. In a separate bowl, whisk together the egg yolks, sour cream, and vanilla extract by hand. Gradually combine the egg yolk mixture with the flour mixture until fully incorporated. 4. Prepare the crumb topping: Remove a large handful of the dough and place it in the freezer for 15-30 minutes to firm up.

5. Roll out the dough. On a floured surface, roll out the remaining dough to ¼-inch thickness, ensuring it’s large enough to cover your cookie sheet. Carefully transfer the dough to the cookie sheet, pressing it into the edges and trimming any excess. 6. Assemble the dessert. Drain the apple mixture if it’s very juicy, then spread it evenly over the dough. Remove the reserved dough from the freezer and crumble it into small pieces over the apple filling. 7. Bake. Bake in the preheated oven for 45 minutes, keeping an eye on the edges to prevent burning. 8. Cool and serve. Allow the pan to cool on a wire rack before slicing. Cut into squares and serve.
